Mulling Spices

3″ coarsely broken stick cinnamon
2 teaspoons whole cloves
2 teaspoons whole allspice
1 Tablespoon dried orange peel
1 shelled cardamom seed, crushed slightly

Place ingredients in a muslin bag, several layers of cheesecloth tied snugly, a mesh tea ball, or a self-seal tea bag.

To Use, pour one gallon apple cider into a pot or crockpot. Add mulling spices. Gently warm. If warming on the stove, remove spices after 20-30 minutes. If warming in a crockpot, remove spices after one hour.

Herbal Spiced Cider Mix

1/4 teaspoon cardamom seeds
1 teaspoon whole allspice
1 teaspoon whole cloves
1 stick cinnamon, broken
1/2 Tablespoon dried lemon balm
3 Tablespoons dried orange mint
1 teaspoon dried lemon verbena
2 teaspoons dried lemon basil

Mix all together in a bowl. Place in a plastic bag and tie shut with a ribbon. Make a sticker or tag with preparation instructions. Attach to the bag. Or, print directions on a small card, punch a hole in the corner of the card, and tie on with the ribbon.

DIRECTIONS: Add about 3 Tablespoons of mix to one quart apple cider, cranberry juice or red wine. Simmer for 10 minutes. Remove from heat, cover and steep for 20-30 minutes. Strain and serve.

Spiced Tea Mix

1 cup orange drink mix
2/3 cup instant tea
1/2 cup sugar
2 Tablespoons powdered lemonade mix
1/2 teaspoon cinnamon
1/4 teaspoon cloves

Mix all ingredients together. Place mix in container. To use, mix 2 teaspoons of mix per cup of boiling water.

Spicy Cocoa Mix

1 cup cocoa
2 cups sugar
1 cup non-fat dry milk
1 Tablespoon grated and dried orange peel
1 Tablespoon ground cinnamon
3/4 teaspoon ground cloves

Mix together and store in a decorative jar. Use 1/2 teaspoon per cup of hot milk or water.
