HERBAL SALTS AND SEASONINGS
Gourmet Seasoned Salt
1 cup salt
2 teaspoons dry mustard
1 1/2 teaspoons dried oregano leaves
1 teaspoon dried marjoram leaves
1 teaspoon dried thyme
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon celery seeds
1/4 teaspoon dried dill weed
Combine all and mix well. Store in an airtight container. Makes about 1 and 1/4 cups. If you prefer a finer mixture, blend in a blender or food processor.
Spicy Molasses Mustard
1 cup dry mustard
6 Tablespoons water
6 Tablespoons molasses
6 Tablespoons apple cider vinegar
1/2 teaspoon each – ground allspice, salt, cinnamon, and ground pepper
1/4 tsp ground cloves
Combine mustard and water in stainless steel bowl. Whisk until well blended. Let stand 15 minutes. Add remaining ingredients and blend well. Put in a jar. Store in cool dark place. Makes about 1 cup. good with sausages and cold meats.
Add 2 or 3 springs of fresh thyme, rosemary or lavender to a small jar of honey, approximately one cup. Cover and let set for 3-4 weeks before using.
Add a few herb leaves to 1/2 cup granulated sugar. Blend on high until herb is pulverized into sugar.
Good herbs for this are: lavender, lemon balm, any mints, pineapple sage or rose geranium.
